  • 1 teaspoon cumin seeds
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garam masala

Salt to taste:

  1. Fresh coriander leaves for garnish
  2. Lemon wedges for serving
  3. For Spice Paste
  4. 1 teaspoon cumin seeds
  5. 1 teaspoon coriander seeds
  6. ½ teaspoon black peppercorns
  7. ½ teaspoon fennel seeds

Preparation

Step 1: Prepare the Spice Blend:

  • Dry roast cumin seeds, coriander seeds, black peppercorns, and fennel seeds in a small pan until well fragrant, being careful not to burn them. Grind in a mortar and pestle or spice grinder to a coarse powder. Set aside this spice blend.

Step 2: Cook the Chicken:

  • Heat oil or ghee in a deep pan or karahi, over medium heat. 
  • Add cumin seeds, and let them crackle for a few seconds and then add the finely chopped onions and sauté till they turn golden brown. 
  • Add the ginger garlic paste, and cook for 2 minutes, or until the raw smell disappears. 
  • Add the chicken pieces and stir-fry for 5-7 minutes until they start to brown.
  • Mix in chopped tomatoes and let it become soft to the extent of making a paste.
  • Add Yogurt and Cream
  • Reduce the fire and add whisked yogurt to the chicken mixture. Stir it very well to prevent curdling.
  • Once it gets well incorporated into the mixture, add the fresh cream for an extra texture. Since I like my gravy creamy, I often add fresh cream to it. You may omit it if you don't prefer a heavy hand.
  • Add red chili powder, freshly ground black pepper, and that spice mix you have prepared so far.
  • Stir well and let it cook over low heat until the chicken is tender and cooked. This should take about 10-15 minutes.

Step 4: Add Green Chilies and Garam Masala

  • Add sliced green chilies to this while cooking the chicken as it tends to add to a certain amount of heat.
  • Sprinkle garam masala on this dish and continue to let it cook for yet another 2 minutes so that the flavors assimilate within each other.

  • Once cooked through, switch off the gas and decorate with freshly chopped coriander leaves.
